Rasmalia Cupcakes

Ras malia are a south asian dessert that are traditionally made from softened cheese or paneer, that are shaped into flattened patties that are soaked into a mixture of sweetened milk /clotted cream. The softened cheese patties soak up the delicious liquid and become juicy and practically melt in your mouth! They are delicious but its a time intensive process.

This is my cheat version of the NY Post Cardomon cream cake/rasmalia cake recipe that there is so much buzz about! In my recipe I use Nanak rasmalia that I purchased from Costco and boxed white cake mix!

 
 

What you’ll need

  • White cake box mix (follow directions on box)

  • 1/4 container of Nanak Rasmalia (that have been thawed)

  • 2 tsp cardomom powder

  • 2 cups of heavy whipping cream

  • 1.5 cup confectionary sugar

  • Pinch of saffron

  • 1/4 cup pistachio sliced up for decoration

1. Follow directions on white cake mix box and bake cupcakes

2. Mix the heavy whipping cream, cardomom powder, saffron and confectionary sugar.

3. Whisk until cream mixture is thick and peaks are formed

4. Refridgerate cream for a hour

5. Let cupcakes cool for 30 mins and then carefully using a spoon make a hole on top of the cupcake

6. Add in a piece of rasmalia into the hole in the cupcake

7. Spoon in the milk from the rasmalia container (roughly 1 tsp) into the hole . Cover with cake piece.

8. Repeat for all the cupcakes

9. Add cream into piping bag with a nozzle and pipe onto the cupcake

10. Garnish cupcakes with sliced pistachio nuts
