A super simple recipe for  Roast Chicken with a side of potatoes that is prepared in one tray! This is a light-tasting recipe where the main star is the smoked paprika. Beautiful and delicious food, with less washing up afterward! Who can beat that combination?

 

What you’ll need

  • 2 lbs chicken legs and thighs

  • 2 lbs potatoes, sliced

  • 2 Tbsp sweet or smoked paprika

  • 1 Tbsp chicken seasoning mix, optional  (Knorr)

  • 1-2 Tbsp vegetable oil

  • 1 tbsp butter

  • Salt and pepper to taste

  • Fresh dill, chopped

  • Lemon slices to serve


1. Preheat the oven to 375 F.

2. Line the baking sheet with parchment paper. Set aside.

3. Rub the chicken pieces with paprika, oil, salt, pepper and chicken seasoning mix if using.

4. Put the chicken on the baking sheet. Put the potatoes in between the pieces of chicken. Season with salt and pepper and add tiny pieces of butter to the chicken.

5. Bake for about 1 hour or until the chicken is golden and the potatoes are tender.

6. Sprinkle with fresh dill and serve with lemon slices.
