Chicken Coleslaw

Enjoy a heartier version of a trusted classic. If you cannot get rotisserie chicken, use leftover chicken or boil a chicken and freeze the chicken stock (and use later!)

 

What you’ll need

  • 1 Cup shredded red cabbage

  • 1 Cup shredded white cabbage

  • 1 Red bell pepper, sliced into sticks

  • 1 1/2 Cup rotisserie chicken, shredded

  • 1 Cucumber, sliced into sticks

  • 1 Stick celery, sliced

  • ¼ Cup chopped fresh dill

  • ¾ Cup mayonnaise

  • 1 lime, juiced

  • Salt and black pepper to taste


1. In a large bowl, add the mayonnaise, lime juice, salt and pepper. Whisk until well combined.
2. Add the remaining ingredients and mix gently.
3. Season with more salt, pepper and dill if desired.
4. Serve and enjoy!
