Arugula Salad with orange, cheese and walnuts

The oil and orange juice (instead of standard vinegar) are the base of this super easy vinaigrette. Change the salad leaves, the nuts, or cheese to create many many different combinations! Sliced almonds. feta cheese crumbles and spinach are also a great pairing in this salad!

What you’ll need

  • Bag of Arugula (Rocket) leaves

  • 1/2 cup walnuts

  • 1/4 cup gorgonzola cheese crumbles

  • 1 peeled orange cut into segments

    Dressing

  • 1/2 cup orange juice

  • 1/4 cup chili flavored olive oil

  • 1/4 tsp Himalayan salt

  • 1/4 tsp chill flakes

1. Wash and dry salad leaves

2. Cut the orange into segments

3. Mix all the ingredients for the dressing together and whisk (or shake in a closed jar) until oil and orange juice are blended

4. Add the cheese, walnuts to the arugula leaves

5. Drizzle the salad dressing over the salad leaves and toss!
