Instapot Sindhi Biryani

If you are in need of some gourmet-tasting Pakistani food and you are short on time. You can whip up this dish in less than an hour using Shaan Masala and your trusted Instapot!
What you’ll need
Taken from Shan Packaging
1st Layer
1 cup oil
1 Shaan Sindhi Biryani mix
2 lbs Whole Chicken cut up
2 medium potatoes (sliced)
1/2 cup plain yogurt
2 medium onions (sliced)
2 tbsp garlic paste
2 tbsp ginger paste
2nd Layer
10 small green chillis (you can omit if desired)
1 cup chopped cilantro/coriander leaves
1 cup chopped mint leaves
2 medium tomatoes (sliced)
1 lemon sliced up
3rd Layer
3.5 cups of rice (soaked for at least 30 mins)
3 tsp salt
food coloring (optional)
I basically follow the instructions on the box with the following modification to make the recipe in less than an hour from start to finish using the Instapot!
Set Instapot -to Sauté mode
Add oil and brown the onions
Then add in the remaining ingredients such as ginger, garlic, potatoes, and chicken, etc (1st Layer ingredients above)
Set Instapot to Manual or Pressure cooker - Cook for 7 mins on pressure cooker mode
Meanwhile, parboil rice and salt on the stove until 3/4 cooked
Drain water from the rice
Open Instapot - Check liquid, add water - if there is not 2 and 1/2 cups of liquid left in the pot (total liquid should equal about 2.5 cups)
Add on 2nd Layer fresh ingredients (such as cilantro and lemon) - (Don’t mix with chicken in the pot )
Add 3rd Layer (Boiled Rice), you can add food coloring if desired (Don't mix with 2nd layer)
Close Lid and set Instapot to Manual or Pressure cooker - Cook for 3 mins
Voila, your biryani is ready to eat! You can eat the rice with raita (spicy yogurt), salad, or sliced boiled eggs!
