Palak Chicken (Chicken with Spinach)

‘Palak’ means spinach in Urdu/Hindi and is a great accompaniment to the chicken. You can use fresh spinach leaves, frozen or even canned spinach. Super easy recipe for a recipe that is low in carbs, healthy, and tasty. The perfect recipe to serve with rice or hot chapatis.

What you’ll need

2 medium onions sliced

1/2 cup canola oil

1 lb chicken breast cubed (roughly 2 large breasts)

1.5 tsp Salt

1.5 tsp garam masala

1 tsp pureed garlic

1 tsp pureed ginger

1 tsp chili powder

1.5 tsp ground coriander powder

1/2 tsp of turmeric

1 bag / 14 oz of fresh baby spinach leaves or 2 frozen spinach blocks

1/2 cup water

Before serving (garnish):

1/4 cup cilantro

2 fresh green chillis (seeded and cut lengthwise)

dIRECTIONS

Heat oil in a large pan

When the oil is hot, add onion over medium heat and cook for 10-15 minutes until golden brown

Add in the cubed chicken and all the spices .

Stir fry for 5 minutes

Add in water and spinach and cover the pan.

Stir occasionally and cook for another 10 minutes on medium heat

Cook on high heat for 10 minutes until the oil is away from the side of the pan (this process is called ‘bhooning’)

Make sure you keep an eye on the pan, you don’t want anything to burn

Sprinkle with chopped cilantro and the chopped chillis

Serve with rice or chappati. Enjoy!
