Finger Licking Instapot Fried Chicken

I was having a craving for some fried chicken. This recipe really hit the spot, especially when I was short on time. Super simple and the hardest part of the recipe is balancing the chicken pieces on the trivet(s) in the instapot. It was finger-licking GOOD!
What you’ll need
1 whole chicken with skin cut into 8 pieces
10 tsp salt
10 tsp black pepper
2 fresh lemons
1/4 cup salt
1 lb all-purpose or self-raising flour
Oil to fry in
To remove the smell from the chicken
Wash chicken thoroughly
Sprinkle salt all over and leave for 5 mins
Wash off the salt
Marinating
Juice both the lemons and sprinkle 1/4 cup of salt all over the chicken
Make sure the chicken is covered thoroughly
Marinate for at least 3 hours, preferably overnight
Find two trivets and make sure that they fit into the Instapot
Add one cup of water at the bottom of the Instapot
Balance the chicken pieces on both the trivets (4 on each layer)
Pressure cook/ manual chicken for 8 minutes
Carefully remove the chicken pieces
Mix together 10 tsp salt, 10 tsp black pepper, and flour into a bowl and mix thoroughly
Put 1 cup of the mixture at a time into a gallon-sized bag ( I do this so I can store away the leftover mixture and use it at a later time!)
Add one piece of chicken to the mixture and shake until the chicken is coated thoroughly
Repeat for all the pieces
Warm oil in a skillet
Place 4 pieces at a time or whatever fits comfortably into the skillet
Brown chicken for 1 minute on each side
Drain on paper towels and enjoy!!
